    balsamic cherry goats cheese sorbet

    I love the combination of cherries and balsamic vinegar, and goats cheese so I decided to experiment and create this sorbet. I made it like you would a normal sorbet then added the soft goats cheese. I don’t have an icecream machine any more as my freezer drawers are too small for the bucket bit, so instead I took it out of the freezer every half an hour and stirred it.

    I am just back from a weekend in London where I hosted a workshop with carole poirot it was really fun, we have a few more dates booked if you would be interested in coming. I feel really tired now though, 5 hours on the coach to London always takes me a while to get over, the journey back was especially horrible as the air conditioner was broken.

    • 400g cherries
    • 150g caster sugar
    • 2 tsp balsamic vinegar
    • 2 cups water
    • 150g goats cheese

    slice the cherries and remove the stones, place in the pan with the balsamic vinegar and add the sugar and heat for a few minutes, then add the water and heat up, then pour into a food processor and pulse, pour through a sift and pour back into a pan, add the goats cheese a spoonful at a time, stirring constantly until combined. pour into loaf tin or freezer proof dish and let cool, then place in the freezer and stir every half an hour for three hours then leave for another 3 to 6 hours.
