this is so easy to make, and is so nice and refreshing on a warm summer day, i used peaches and blueberries but other fruits like strawberries and raspberries would also be good.
you could also add a biscuit base if you wanted.
i used a jelly mould to make this but you can use any shape cake mould you like.
i added a sparkling candle on top.
1 and 1/2 cups blueberries
4 peaches peeled and chopped
1 cup double cream
3 cups natural yogurt
1/2 cup sugar
you will need two saucepans, add the blueberries and half the sugar in one pan with 1 tbsp of water, then add the peaches and the other half of sugar in the other.
simmer over a low heat until the fruit becomes soft, puree the peaches in a food processor and push through a sift into a bowl.
pour the blueberry mixture through a sift to remove the bits. (no need to puree)
in a large bowl whip the double cream, then add the yogurt, add some of the yogurt to the peach mixture then add some yogurt to a bowl and stir in a few tbps of the blueberry mixture then add some yogurt to the blueberry mixture making two shades of the blueberry yogurt and one peach.
pour the darkest yogurt in to the mould first and place in the freezer for 5 minutes, then add the other two bowls of yogurt adding the lighter blueberry mixture first, then the peach. freeze for approx 4 hours.
add 1/4 cup of blueberries and 3 tbsp of sugar in a pan with a tsp of water and reduce it until a syrup forms then pour through a sift into a small bowl, drizzle over cake and add some more blueberries to decorate.
if you wanted a biscuit base make it as you would for a cheesecake and press it into the mould when the cake it completly frozen and place back in the freezer for a further half an hour.
