this berry tart is so easy to make and tastes great, especially with some ice cream
i made the word home made by measuring the tin and making a stencil out of card.
I used shortcrust pastry
200g plain flour
pinch of salt
2 tbsp ice cold water
rub the butter and flour and salt together until a bread crumb like consistency is formed, then add the water and bring together into a ball of dough. then cover and place in the fridge for 20 minutes to rest.
preheat the oven to 180c/350f
roll out the pastry and place in greased tin, cut off excess pastry and place some baking paper and baking beans in and blind bake for 15 minutes, after 10 minutes remove the beans and paper.
slice a punnet of strawberries,
sprinkle some polenta or cornflour in the tart case to help absorb any liquid from the fruit,
sprinkle in two tbsp granulated sugar then fill the tart cake with the strawberries and raspberries and sprinkle more sugar on top.
place a piece of baking paper on the work top and roll out the pastry.
use a sharp knife and draw around the template or cut in free hand,
smooth the edges of the letters to make them look tidy
place a piece of baking parchment on top and then flip it over and remove the piece of paper it was cut on then you can easily turn it onto the tart.
bake for 20 minutes until the pastry has turned golden brown
