i love this time of year as it brings allot of cookies. i made these ginger linzer cookies and i filled them with a buttery caramel.
i just love spiced cookies.
recipe for cookie dough
1 and half cups plain flour
half cup butter
1/2 cup ground almonds
1/4 cup dark brown sugar
1/4 cup soft light brown sugar
2 tsp ground ginger
1 tsp ground cinnamon
1 tsp mixed spice
2 egg yokes
1 tbsp golden syrup
1/2 tsp baking powder
in a food processor add the flour, spices, ground almonds, sugar and baking powder and pulse to mix, then add the butter and mix or if making by hand rub the dry ingredients with the butter until it resembles bread crumbs then add the yokes and golden syrup and mix.
tip out on a floured work top and knead into a ball,
cover in plastic wrap and put in the fridge for about half an hour to an hour,
roll out on a floured surface and cut into circles, then use a smaller cutter to make a hole in the centre,
bake for 7 minutes.
to make caramel
1 cup brown sugar
6 tbsp butter
1/2 cup heavy cream
Heat the sugar in a heavy based pot
and as soon as the sugar has all dissolved, remove it from the heat and add the butter one tbsp at a time whilst continuously whisking.
Return the pot to the heat and add the cream immediately, still whisking.
When the sauce has become smooth remove it from the heat and add a good sprinkle of salt which dissolves.
Allow it to completely cool.
(make the caramel ahead of time and keep in the fridge so it can be put in the cookies easily)
