    apple rosemary and cider glazed onion sausage rolls

    I just love sausage rolls, they are a perfect snack, but also a great thing to bake and take along to parties ect. in my family my grandma is always in charge of bringing the sausage rolls (on boxing day normally) but I decided to give the humble sausage roll a little makeover and add cider glazed red onions, some grated apple and chopped rosemary. they where packed with full of flavour and a real winner with every one that tried them. I’m not going to lie I just couldn’t be bothered to make my own puff pastry, I know its naughty for a food blogger, I mean I am human after all, I can cheat once in a while, plus do you really have the time to make it from scratch every time? I do enjoy making my own puff pastry occasionally but I just really wasn’t in the mood in this occasion and the shop bought stuff is so good. so back to the real reason your here, they sound good right? I decided to buy some really high meat quantity sausages (98% meat) and push the meat out of the skins rather than buying regular sausage meat. I’m not sure if this helped but I’m sure it added to it. I think a normal sausage has about 80% meat in case you are wondering.

    • 8 high meat quantity sausages
    • 1 red onion
    • 1/4 cup cider
    • 1 spring of rosemary finely chopped to make about 1 tsp
    • 1/3 cup fresh bread crumbs
    • 1 large cooking apple grated
    • salt and pepper

    in a frying pan add some oil and fry the onions until they start to turn soft and translucent then add the cider and reduce. let cool. push the  sausages out of the skins and put in a mixing bowl, add the bread crumbs, grated apple, rosemary and onion and mix.

    preheat the oven to 180c

    roll out the puff pastry into a large rectangle (or buy the ready rolled pastry) and cut in half (see below) press meat into a long mound on one side of the pastry and brush a beaten egg down the edge and pinch the edges together. make slits onto the tops and cut into little sausage rolls. brush the tops with egg then sprinkle on some flaked salt and some finely chopped rosemary. bake for 30 minutes, until golden.

    these will be great to take along on thanksgiving or Christmas or to a holiday pot luck at work.

      I love sausage rolls too and these sound amazing. I feel you with the puff pastry the shop brought stuff works just as well.
