    summer panzanella salad

    this time of the year brings such a variety of salad recipes, I wasn’t sure if there was room for one more, but I had to share it as this recipe helps use up all your seasonal produce. I used white peaches, and strawberries peas from my garden and some heirloom tomatoes as well as cucumber which I got from my grandmas garden. I used mozzarella balls but feel tree to use any cheese you like. I just love how colourful this salad is. and I got to use my big homemade bowl that I made at pottery class. panzanella is basically a bread salad usually with tomatoes and mozzeralla or ricotta. salad is so easy it always feels weird writing a recipe for it as I tend to just throw what I have together.

    recipe

    • 2 peaches
    • 1 cup of strawberries
    • handful of fresh peas
    • loaf of ciabatta
    • handful of basil and thyme
    • 1 cup of mozzarella
    • 1 small cucumber
    • 1 and 1/2 cups of heirloom tomatoes
    • hand full of rocket leaves

    dressing

    • 1/2 cup olive oil
    • 1 piece of garlic
    • salt and pepper
    • splash of balsamic vinegar

    to make dressing add the ingredients into a processer and pulse until the garlic has been chopped and mixed in.

    remove the peas from their pods and boil for a few minutes until cooked and drain, chop up the cucumber and tomatoes and place in a bowl with the rocket and mozzarella, heat a griddle and grill the peaches and torn up pieces of bread until it starts to char. add into the bowl then add sliced strawberries and basil leaves. add the peas then pour over the dressing and toss to cover, then add a sprinkle of thyme leaves and some pansy petals. so easy to make but it tastes great
