    apple and banana cake gluten and sugar free

    this recipe is inspired by one a saw the Helmsley and hemsley sisters make on TV, I changed it a little and added apple, flaked almonds, sunflower seeds, cacao nibs and banana chips and ground banana chip flour. I have quite a sweet tooth so I used about 5 heaped spoons of honey rather than the two tbsp of maple syrup that the recipe called for. I let the bananas get really ripe as they get a lot sweeter when you let them go black.

    apple and banana cake gluten and sugar free
    Ingredients
    • 300g 110z ripe bananas
    • 30g coconut oil
    • 4 tbsp. honey or maple syrup
    • 1 tsp ground cinnamon
    • 1 tsp vanilla
    • 3 eggs
    • 1/2 tsp bicarbonate of soda
    • 1 tsp lemon juice
    • 220g 7 3/4 oz ground almonds ( I added 180g ground almonds and 40g ground banana chip flour)
    • 3 tbsp flax seeds
    • 3 tbsp cacao nibs
    • 4 tbsp sunflower seeds5 banana chips broken up
    • 5 tbsp ground almonds
    • 1 large apple chopped into small chunks
    Instructions
    1. preheat the oven to 170c
    2. soften the coconut oil and mix with the honey, add the mashed bananas then add the eggs one at a time..
    3. in a bowl mix the ground almonds (and ground banana chip flour if you are using it), bicarbonate of soda, cinnamon, seeds, cacao nibs, flaked almonds and banana chip chunks add to the bowl with coconut oil, honey and eggs
    4. add lemon juice and vanilla extract then add the dry ingredients.
    5. mix together then add the chopped apple.
    6. pour into lined loaf tin and bake for about 45/50 minutes until a knife inserted comes out clean.
