This cake was so wonderfully moist and delicious.
We all really enjoyed it.
I love black grapes they are my favourite they went really well with the lemon and thyme and I added some greek yoghurt too.
I served it with comb honey and sweet labne (yoghurt cheese) get the recipe for the labne here
220g 1 cup butter
220g 1 cup caster sugar
220g 1 and half cups plain flour
2 tsp baking powder
zest and juice of 1 lemon
Few sprigs of fresh thyme
20 black grapes
1/2 cup greek yoghurt.
Preheat the oven to 180c 350f
in a bowl cream together the butter and sugar until soft and fluffy then add the eggs one at a time making sure each one is properly combined before adding the next, then add the lemon juice and zest and pick the leaves off two sprigs of thyme and add that.
sift in the flour and salt and fold in then add the yoghurt.
Roll the grapes in flour and fold them through out the cake batter (this helps stop them from sinking)
Pour into a grease bundt tin and bake for about 45 minutes
