this loaf cake is so moist and has so much flavour it is defiantly a new favourite,
its really easy to throw together if you need a cake to serve with tea/coffee if you have friends or family coming around.
i apologise to my American readers as this recipe is in grams rather than cups.
150 unsalted butter
60g pecan nuts
6-15 cardamon pods
180g light muscavado sugar or golden caster sugar
100ml freshly brewed earl grey
200g dried mixed fruit
200g self raising flour
grated zest of one large orange and lemon
1/2 tsp salt
2 eggs lightly beaten
preheat the oven to 180c/ 350f
line a tray with baking paper and sprinkle over the nuts and gently roast for 5 minutes
let cool and chop and put to one side
brew some earl grey and measure 100ml and leave to cool
in a mixer add the butter and sugar and mix until light and fluffy
add the cooled tea and mix until completely combined add the beaten eggs and mix
take the cardamom pods and slice open and remove the little seeds then with a pestle and mortar grind the seeds until powdery add to flour with salt and sift into mixture, mix then grate the zest of one large orange and a lemon and mix and add the dried fruit and nuts and stir to combine,
add to a greased and lined loaf tin and bake fo50/55 minutes until a knife inserted comes out clean.
i made a glaze with some of the juice from the orange and some powdered sugar and decorated it with some candied peel but if you like you can keep it plain and add some butter to it.
