i love lebkuchen but i can never pronounce it, i usually see them in the shops leading up to Christmas.
they are a popular German ginger bread type cookie.
i thought it would be fun to make them in to mushroom shapes. they would be great for a woodland themed party.
i was going to put them on top of a black forest gateau but we ate them before i had chance to make it As they were so good.
1 egg and 1 yoke
200g 7oz caster sugar
200g 7 oz plain four
2 tbsp cocoa powder
1 tbsp ground cinnamon
1/2 tbsp ground cardamon
1/2 tbsp ground ginger
1/4 tbsp ground gloves
1/4 tbsp ground nutmeg
125g 6oz ground almonds
55g 2 oz mixed peeled finely chopped (I just used grated orange zest)
line several baking trays with baking paper.
in a heat proof bowl over a pan of gently simmering water add the eggs and sugar and whisk until thick and foamy, remove from heat and continue to whisk for 2 minutes .
sift the flour, almonds, spices, cocoa and peel and fold into the egg mixture,
roll the dough into a ball and cover in cling film and place in fridge for 20 minutes
preheat the oven 180c 350f
flour work top and split dough in half. with one half make balls and lay out on tray.
with the other half make trunk size pieces for the mushroom stalks. bake for 15 20 minutes
let cool on a wire wrack.
make icing thick by adding only a little water and mixing until it until it seems wet enough to coat the cookies but not to runny that it is to thin
i used about 300g icing sugar and added a tsp of water at a time until it was thick.
dip the cookies in sprinkle on some cocoa powder to look like mud and leave to dry.
melt 100g chocolate in a heat proof bowl, using a paint brush add it to the bottoms of the mushroom tops, or dip the bottoms in to the chocolate gently,
mix 100g icing sugar with a few drops or water so it makes a thick paste and add some to the tops of the stalks and press them on to the mushroom tops to glue them together leave to dry.
