rosewater cardamom and orange genoese cake

they say that cardamom is the queen of spices so i decided to make a cake worthy of a queen, i also added rosewater and orange to create this cake.

these little pies are so easy to make and they taste really good, i made these with peaches and blueberries but they can be made with any other fruit you have to use up.

natural coloured rainbow cake with edible flowers

i wanted to create a rainbow cake with natural flavours and colours rather than using food colouring as i know some people can not have artificial colours and flavours.
i got the flowers from maddox farm organics i asked for a rainbow selection to go with the cake I'm so pleased with the beautiful selection they sent.

chocolate and beetroot cake

i love chocolate and beetroot together, the deep earthy flavour of the beetroot goes so well paired with the rich flavour of the chocolate, and its great as it keeps the sponge nice and moist.

blueberry peach macaroon thumb print cookies

i added blueberry sauce into the macaroons to turn then a lilac colour and give them extra flavour then i made a quick peach jam to drop in the centre of each one.
i added 150g desiccated coconut and 50g almonds rather than just using coconut on its own.

peach and blueberry frozen yogurt cake

this is so easy to make, and is so nice and refreshing on a warm summer day, i used peaches and blueberries but other fruits like strawberries and raspberries would also be good.
you could also add a biscuit base if you wanted.

hazelnut dacquoise with blueberry cream

a dacquoise is a nutty meringue, i used hazelnuts for mine but almonds are also good.
i used blueberries to add flavour to the cream and then decorated it with some cornflowers.
it is gluten free so its great for people with allergies.

little honey mascapone cakes with figs and pistachios

These little cakes are so nice. they are basically like two small cupcakes sandwiched together.
I added some honey to the sponge and also drizzled it on the mascapone with some pistachios
 and half a fresh fig, i think figs go really well with cream cheese.

four layered pavlova with pinapple orange curd and dried pineapple flowers

i love making pineapple flowers i think they look like sunflowers.
i decided to use them for this tierd pavlova.
 i used the left over pineapple and egg yokes to make a curd to go in it and added orange and lemon, it was so refreshing.

buckwheat summer berry cake

i thought this cake would be a nice way to use up all the berries i had in the fridge.
i made the sponge with buckwheat flour and then added some whipped heavy cream and a berry compote then added more berries on top.

i love almonds so i decided to cover these little cakes in them,
i cut out the centres and filled them with sweet mascapone and the sponge is flavoured with orange and almonds.

my mum and my grandma and i went on a dog walk yesterday and we found some blackberries.
usually they are not ready to pick till at least august here in england so it was weird to find them so early so we picked some and i decided to make these meringues.

yum yums recipe

i love yum yums they are my favourite treat to buy from the bakery.
so i thought i would make my own.
if you have no idea what a yum yum is its a bit like a french cruller crossed with a croissant. almost like a glazed cronut.
the dough is like a quick croissant dough that is laminated and folded.

cherry pie smores with cherry marshmallows

i decided to put a summer spin on the traditional smores and make cherry pie flavour ones, i made home made cherry marshmallows and lattice cookies rather than graham crackers.
they were really good, i love making my own marshmallows at home.

giant pecan pie chelsea bun

If you love pecan pie then this giant Chelsea bun is for you . I really enjoy bread type sweets so this was great. It's a bit like a huge cinnamon bun with pecan pie flavoured filling.
