pineapple passion fruit sorbet

this sorbet is so tasty and is really refreshing, i scooped out the inside of the pineapple to use it as a serving bowl. it was so easy to make and really worth a try.

golden easter egg and how to temper chocolate like a pro

tempering chocolate is when you heat chocolate and then cool it down again, it makes the chocolate smooth and shiny, to do this you need a marble slab or flat cold surface and a pallet knife.
i always use one bar of good quality dark chocolate which is at least 70% cocoa and i mix it with a cheap milk chocolate bar.
i found this vintage metal mould on ebay and had to have it but plastic moulds work just as well if not better.

cheesecake eggs and shortbread soldiers

who said egg and soldiers had to be for breakfast!,
these cheesecake eggs with orange marmalade yokes and buttery shortbread soldiers make a great Easter pudding.
the cheesecake is really easy to make and theres no baking involved just whipping.
the shortbread is easy to prepair and bake to so its great to make with children.

hot cross bun cupcakes

i love hot cross buns they are one of my favourite Easter foods.
 traditionally they are eaten on good Friday, but i would happily eat them all year around if I could. 
the flavours of a hot cross bun have been used to make these cupcakes and they were wonderful.

epi pain recipe

 i love the look of the pain de epi, it is meant to look like a head of wheat.
its great as a tear and share loaf as the pieces can be broken off easily.

blueberry and lavender Religiuese

after my recent trip to laduree in london i was inspired to make these religiuese.
i piped in whiped cream with blueberry syrup rather than the traditional pastry cream.
i got the spoon and colinder in anthropoligie whilst i was in london too.

lime and coconut madeleines

i really like coconut, especially with lime so i made these little madeleines, they turned out lovely. i think they taste best still warm with a nice cup of tea.
i had a real coconut that i used as a bowl, i got my brother to saw it in half for me.

raspberry and white chocolate flower cupcakes

i decided to pipe a flower on top of each cake to make them look pretty.
 they would be great for mothers day. 
it is really easy to do, trust me i am awful at piping.
i made the sponge raspberry and white chocolate flavour with cream cheese frosting.
the flowers turned out a little like carnations.

croquembouche recipe

theres something about a croquembouche which always looks so appealing, 
 i have been wanting to make one for a while so this weekend i finally got around to it.
i can see why in France they have it as their traditional wedding cake.
i used flowers to decorate mine, normally it would be decorated with spun sugar.
the word croquembouche means crack or crunch in the mouth.

i had a great day in London last Monday i got to in antropologie for the first time and i had my first ever laduree macarons which were pricey but lovely.
i love London i wish i could go there more often.

these parsnip chips are so good they are sweet and crunchy, they are a great snack but they also tasted great sprinkled on my parsnip gnocchi with cheese sauce,
they are quick and easy to make to.

i found a vintage metal chocolate egg mould online so i used it to bake the egg shape sponge.

mocha macarons recipe

these macarons tasted so good, it has taken me so long to perfect macarons, sometimes its a disaster and they all crack or sometimes they stick to the mat and it can be stressful but it has really been a case of practise makes perfect for me,
i do find that my kitchen looks like a bombs gone off when ever i bake them but its worth it for these tasty little cookies.

edible rose cake pops

these roses are in fact cake pops, i had the idea the other day to create an edible bouquet,
they are cake pops with sugar paste petals.
i used stems from faux flowers instead or Popsicle sticks to make them appear more realistic.
they would be great for mother day.

homemade spelt flour spinach tortilla chips

these tortilla chips tasted amazing, my partner aways turns his nose up at spinach but he loved them.
i used spelt flour and coated them with some garlic and herb seasoning.
i used a little sesame oil as well as olive oil for extra flavour.
 they went so well with the beef chili that we had for tea.
 i really enjoyed them and they are good for you too.
these tortillas would also be great as a sandwich wrap.

the weather has been beautiful here in England so my partner took the dog out for a long walk giving me the chance to do some baking undisturbed, so i made some spinach tortillas and some macarons.

violet and lemon eclairs

i found this vintage eclair pan on ebay, i just love vintage baking tins, i always think they must have such a history and imagine all the kitchens they may of been in.
the violets were picked for me by my mum and grandma whilst they were on a dog walk, i washed them and then candied them with egg white and sugar.

i got a small plastic egg mould on ebay and used dark chocolate and white chocolate to make them.
they would be great for Easter.

herb laminated pasta

i have been wanting to make pasta like this for ages and finally i have got around to it.
i borrowed my mums pasta machine to roll it out as i wanted to get it really thin, i have put one on my to buy list as i think it would be great for pastry and icing too.
i used coriander as i thought it would look nice in the pasta put flat leaf parsley, basil and other thin leaf like herbs will work fine.

 i decided to line the bottom of the basin with some slices of blood orange as they are in season.
