four layered pavlova with pinapple orange curd and dried pineapple flowers

i love making pineapple flowers i think they look like sunflowers.
i decided to use them for this tierd pavlova.
 i used the left over pineapple and egg yokes to make a curd to go in it and added orange and lemon, it was so refreshing.

buckwheat summer berry cake

i thought this cake would be a nice way to use up all the berries i had in the fridge.
i made the sponge with buckwheat flour and then added some whipped heavy cream and a berry compote then added more berries on top.

almond and orange and mascapone cakes

i love almonds so i decided to cover these little cakes in them,
i cut out the centres and filled them with sweet mascapone and the sponge is flavoured with orange and almonds.

blackberry raspberry meringue kisses

my mum and my grandma and i went on a dog walk yesterday and we found some blackberries.
usually they are not ready to pick till at least august here in england so it was weird to find them so early so we picked some and i decided to make these meringues.

yum yums recipe

i love yum yums they are my favourite treat to buy from the bakery.
so i thought i would make my own.
if you have no idea what a yum yum is its a bit like a french cruller crossed with a croissant. almost like a glazed cronut.
the dough is like a quick croissant dough that is laminated and folded.

cherry pie smores with cherry marshmallows

i decided to put a summer spin on the traditional smores and make cherry pie flavour ones, i made home made cherry marshmallows and lattice cookies rather than graham crackers.
they were really good, i love making my own marshmallows at home.

summer berry icecream and homemade chocolate cones

i love making my own icecream especially when theres no need to churn it.
the icecream is made with condensed milk and double cream and the juice of blueberries, raspberries and cherries, it tasted really good, and the cones are easy to make too, if you dont have a cone mould you can use a circle of card rolled into a cone.

nutty granola balls

these granola balls are so easy to make and they taste great i love them.
i add seeds, nuts and dried fruit with granola and peanut butter and honey to make them, i bake them as i like them crunchy but they can be eaten raw.

pretzel peanut caramel bars

these bars are so easy to make and taste amazing.
they are have a peanut, cracker crumb and pretzel layer with a salted caramel layer on top.
they dont last very long in our house as everyone loves them.
for quickness i use shop bough caramel but if you have time i bet they would be even better with homemade caramel.

cinnamon danish pastry scrolls with lemon icing

my partner and i love danish pastries and we often buy the cinnamon danishes from the bakery but i decided to make my own and im so glad i did as they were amazing.
the dough takes a little time to make but the process is not difficult it just requires alot of folding and resting time so i would suggest making the dough the evening before you need it.
my partner asked for a lemon drizzle icing which actually made these great pastries even better.

churro balls with dulce de leche dipping sauce.

 i love churros, but i fancied changing their shape and rather than long piped churros i rolled the dough into balls.
the dough is basically like a choux pastry that is fried and i was able to roll it with my hands as it was firm enough, i found slightly damp hands roll it better.
traditionally they are eaten with a chocolate dipping sauce but i used dulce de leche instead.

oreo macarons recipe

these macarons were so yummy, i love oreos so these were extra special, my partner said they were the best i have made so that was good. if you love oreos and macarons then give them a go.
i love making macarons at home and prefer homemade ones to the shop bought ones.
