homemade spelt flour spinach tortilla chips

these tortilla chips tasted amazing, my partner aways turns his nose up at spinach but he loved them.
i used spelt flour and coated them with some garlic and herb seasoning.
i used a little sesame oil as well as olive oil for extra flavour.
 they went so well with the beef chili that we had for tea.
 i really enjoyed them and they are good for you too.
these tortillas would also be great as a sandwich wrap.
to make them you will need
2 cups spelt flour
3 packed cups of fresh spinach
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp garlic herb seasoning (optional)
3 tbsp olive oil
1 tbsp sesame oil (you can use 4 tbsp olive oil if you prefer)

for the tortillas
in a pan add the spinach with 1/4 cup water, put the lid on and cook for 7 minutes until the spinach has sweated down,
puree with remaining water, add to a mixing bowl with the oil, salt, 1 and 1/2 cups of the flour and baking powder.
mix together adding the rest of the flour slowly until a soft ball of dough is formed.
 
flour work top and divide into 8 even balls
roll each one out into tortilla shape and dry fry for 35 seconds on each side,

for the chips 
preheat oven to 350f
slice the tortillas in to triangles and spread out on baking try and spray with some light cooking oil, sprinkle over some more garlic and herb seasoning and some salt and bake for 6 minutes then flip over and bake for a further 6 minutes.

  1. These look so good, I cant get my kids to eat spinach but they will eat tortilla chips so these are perfect and they will never know spinach is in them!

  2. How cute would it be to cut these into shamrocks with a cookie cutter, instead of triangles, and use them for Saint Patrick's Day tomorrow? And, if not, they look delicious as is. I love the the rustic color from the spelt and spinach combination. Really lovely!
