lychee and cherry sorbet

i was at the supermarket today and i saw some lychee's so i decided to buy some, i have never bought them before so i wasn't sure what to do with them, i decided on a sorbet, which i haven't made before either so i just made it up the recipe as i went along, i already new the basic ingredients for a sorbet so it was easy.

first you need to peel the hard skin off i used a knife to make a hole then peeled the rest off with my hands, then i made a slit and removed the pips
then i chopped them up, and got some cherries and chopped them up and
put them to one side. in a small heavy pan i put about 2 inches of water and added 4 table spoons of caster sugar and put it on a high heat for a few Min's stirring it. then i added the lychee's and the cherries just to soften them, and i also added a tea spoon of honey and a few drops of lemon juice. and left it on the heat for 5 Min's, still stirring it, i added a few drops of strawberry extract, then i removed it from the heat and let it cool for a few minutes and put it into a blender and then i poured it through a sift into a mixing bowl to remove any lumpy bits. next i added two egg whites and whisked it for two minutes and put it in the freezer. if you have a ice cream maker then you can use that, but as i don't, so i put it in the freezer and removed it every 20 minutes for the first hour of freezing and stirred it and returned it to the freezer, then i left it for two hours and its ready.

i has to be the most amazing sorbet i have ever tasted it was amazing.

  3. I don't know how you resisted eating the lychees! I love that you had the self-control to make a sorbet out of them lol. I would eat them all :)

I make a lychee and peach sorbet that is just delicious... and even in winter I have been known to make it using tinned lychees as I just miss it so much... here is Australia we are in the middle of lychee and cherry season so i am off to the market so I can make this straight away... love the photos as well... so happy to have found your blog...xx
